Basically, it's what happens when someone wins something three times in a row! It comes from cricket, from when a bowler takes three wickets in a row and (please confirm this) gets given a new hat.

My cricket knoweldge is sadly lacking.

Incidentally, a hat trick is a hat trick no matter what kind of headgear the person doing the hat trick is wearing.
